CHURRASQUEIRA CARLOS MARTINS located in Toronto is looking for full-time Specialty Food Chefs with a minimum of 3 years experience in authentic Portuguese cuisine. Duties include: developing and planning menus and daily specials; ensuring the preparation of all menu items; creating prep lists for kitchen crew; maintaining standards for food storage, rotation, quality, and appearance; establishing maintenance and cleaning schedules for equipment, storage and work areas; preparation of traditional Portuguese seafood and grilled meat specialties including Camarão Piri Piri (spicy shrimp), Mexilhões à Espanhola, Combinado de Marisco (mixed seafood platter with lobster, crab, shrimp, scallops, mussels, clams and squid), Gambas Grelhadas (grilled tiger shrimp), Lula Grelhada (grilled squid topped with parsley infused olive oil), Chouriço à Bombeiro (grilled smoked Portuguese sausage flaming in aguardente), Arroz de Marisco (traditional Portuguese seafood rice), Bacalhau à Brás, Bacalhau à Lagareiro, Carne de Porco à Alentejana, Bitoque, and traditional Portuguese grilled fish and seafood dishes. Experience with Portuguese-style seafood preparation, salt cod dishes, charcoal grilling, and traditional Portuguese marinades and seasoning methods is required. $35-$36.25 per hour.
